Carbs! Carbs! Carbs!
Am I the only one to smell anything baking and get ready to toss my weeks’ worth of clean eating out the window?
I am all too quick to not stop at one, try a dozen. So here is a delicious recipe that you can indulge in without the guilt, and that won’t break your diet.
Ingredients
1 ¾ Cups of Quick Oats
1 ½ Cups of Flour
1 Tsp. Salt
½ Tsp. Ground Cinnamon
¼ Tsp. Ground Nutmeg
1 Tsp. Baking Powder
1 Tsp. Baking Soda
½ Cup butter, softened, Not Melted
1 Cup Tightly Packed Light Brown Sugar
½ Cup White Sugar or Stevia for less calories
1 Egg
¾ Cup Applesauce (I like the Cinnamon Applesauce, Extra Flavor!)
2 Cups Semi-sweet Chocolate Chips (I prefer Dark Chocolate, antioxidants and vitmins.)
½ Cup Raisins
½ Cup Craisins
½ Cup Chopped Walnuts (Optional)
Preheat oven to 375. Grease cookie sheet.
In a medium sized bowl, thoroughly combine quick oats, flour, cinnamon, nutmeg, baking soda, and baking powder; then set aside.
In a large bowl, combine butter, white sugar, and brown sugar until creamy. In small bowl, mix egg and applesauce together until smooth consistency, then add to sugar mixture. Beat together until smooth.
Stir in oatmeal mixture by the cup full, until well blended. Fold in raisins, craisins, and chocolate chips. (And Walnuts if you prefer.)
Make sure batter is thoroughly mixed.
Use two teaspoons, and drop batter onto the prepared cookie sheets.
Bake for 7 to 11 minutes. Allow the cookies to cool, around 5 minutes, before attempting to remove them to wire rack to finish cooling.
From star to finish you will have cookies in under 30 minutes.
